The best part of my job is the inspiring people that it allows me to meet. Paloma is a Type 1 Diabetic. She does speaking engagements spreading awareness about life with diabetes. She is a wonderful woman and the few times that we have worked together we have had so much fun. As a result of her Type-1 diabetes, she is on constant monitoring and abides by a low-carb diet. It didn’t take us very long to make our way to the kitchen where we made some yummy, quick, low-carb recipes for her to enjoy. First, was the berry and yogurt cups that included low sugar, home-made whipped cream with slivered almonds. Next, were the Cauliflower stir-fried rice bowls. After that, were the low carb carnitas tacos that we made from pulled pork that was actually leftovers from the night before. Just between us, the pork may have even tasted better than the night before. Resourcefulness is the secret ingredient to this recipe. Next, were the quick grab-and-go muffins, that were a combination of sausage, eggs, and cheddar cheese. Last but not least, was another on-the-go snack that is currently super trendy, avocado toast. At the end of our experimenting in the kitchen, she had five new recipes that she now knew how to make, and I had a memory card full of new photographs.
